T-Bone Steaks with South West Rub

Grab yourself a couple big ‘ole Wailua Meat Company’s T-bones and don’t be shy with the rub. Total prep time about 20 minutes. Serves 4 hungry people.


  • 2 teaspoons Guajillo powder (or ancho chile powder if you don’t like it hot)
  • 1 12 teaspoons cumin
  • 1 teaspoon hot paprika (or use regular mild paprika and add a smoked chili pepper to the mixture, such as chipotle powder)
  • 1 teaspoon garlic powder
  • Course salt and freshly ground pepper (a lot)
  • 2 T-bone steaks

Bring steaks to room temperature. Light grill and preheat to medium. Put all dry ingredients in a bowl and mix together. Rub them very liberally all over the steaks. Grill over moderate heat for 8 minutes per side for medium-rare; transfer to a work surface and let rest for 5 minutes before serving.
