STEAK SANDWICH WITH ROASTED GARLIC SRIRACHA AOLI

A crowd-pleaser gets elevated, sort of. Serves 4 hungry humans.

INGEDIENTS

1 pound Wailua Meat Company’s Chuck Steak
1 large head garlic
1ā„2 cup mayonnaise
1 lemon, juiced
1 tablespoon Sriracha
1 tablespoon olive oil
4 sandwich rolls, buttered and grilled
Salt and pepper to taste

Cut off the top of garlic head. Splash a bit of olive oil on top of the cloves. Wrap the garlic up in foil and roast in the oven for 1 hour. Remove from oven and cool.
Pre-heat the grill and bring steak to room temperature.
Squeeze roasted garlic from each clove into a bowl with mayonnaise, Sriracha and lemon juice. Blend it all up nice and smooth.
Rub oil on steaks and season with generous salt and pepper. Place on grill over medium. Let steaks rest 5 minutes before slicing.
Cut rolls and butter. Grill for 2 minutes face down.
Spread garlic aioli on the roll and top with steak slices.
